Barley is an ancient grain that was used by the Egyptians as a currency, grave goods and offerings to their Gods. The Sumerians and Babylonians made several types of beer out of barley and it was used in marriage, childbirth, funeral and healing rites in ancient India.

Whole grain or pearled barley has a chewey texture and can be used like rice, couscous or quinoa. To prepare as a base for a pilaf or to serve with a stir fry, put 1 cup barley and 2 cups water in a sauce pan and simmer for 40 minutes or until tender. Quick-cooking barley is also available. Barley has been used for millennia in the making of beer.
