Bok choy, also called Chinese cabbage, is a leafy green vegetable that has been grown in China since at least the 14th century CE.
Bok choy is believed to help prevent cancer and its high nutrition content helps the body heal from a variety of illnesses.
Bok choy is delicious stir fried with ginger and garlic, a little rice wine and soy sauce and served over rice. It is best cooked. Raw bok choy has been linked to thyroid disorders.
Bok choy is rich in vitamin C, folic acid, calcium, magnesium, potassium and fiber.
