Broccoli is a vegetable related to cabbage that is harvested and eaten in the flower bud stage.
The Romans believed that broccoli increased strength and enhanced leadership qualities in those who ate it.
Broccoli is tasty raw with ranch dip or bleu cheese dressing or lightly steamed with cheese sauce or lightly sprinkled with herbs.
Use a carrot peeler to peel off the tough skin from the thick stalk and chop it up to use in your broccoli dishes or cube it, cook it soft, put it in the blender with some leftover mashed potatoes, some thyme and some sour cream and kefir, heat, melt cheddar cheese in and call it cheesy broccoli potato soup (seriously yummy). Save the skin for making stock.
Broccoli is rich in vitamin C and calcium and strengthens the immune system. Broccoli contains compounds that fight cancer.
