Buckwheat is most often ground into flour and used for making pancakes, muffins or noodles. In Japan, buckwheat noodles, called soba, are eaten during New Years celebrations to encourage money luck for the coming year. They are also gifted to neighbors on all sides when a family moves into a new home to encourage good fortune and friendship between everyone involved.

Whole buckwheat kernels are also eaten as a cereal grain and are often called buckwheat groats. When the groats are roasted, they are known as kasha. Kasha also refers to an Eastern European side dish or hot cereal made of buckwheat that is roasted and then boiled or steamed.

Buckwheat can easily be roasted at home in a large cast iron skillet over medium high heat.
