Carrots are a root vegetable that store well between growing seasons.
Carrots are tasty raw dipped in peanut butter, hummus or ranch dressing. They are also a common addition to soups and stews or served as a side dish. Roasting carrots brings out their natural sweetness. Just drizzle with olive oil, sprinkle with salt and black pepper to taste and roast in a 400 degree oven for a half hour or so or until tender.
Carrots are rich in fiber, Thiamin, Niacin, Vitamin B6, Folate, Manganese, Vitamin A, Vitamin C, Vitamin K and Potassium.
