Brassica oleracea

Cauliflower is a close relative to cabbage that produces a tight, white flower head, called the curd, enclosed in juicy cabbage-like leaves. The entire plant is edible though the outer leaves are usually discarded.

Cauliflower is delicious raw in salads or with hummus or another dip. It is also wonderful pickled, steamed or roasted. It has a mild cabbage flavor and a crisp, pleasant bite when raw or lightly steamed. Well-cooked they can be mashed liked potatoes. They are also tasty baked with cheese like an au gratin or cooked in a curry.

Cauliflower is a cool-season crop. You will get the best price in the spring and autumn.
