Plantain is a banana-like fruit that is more starchy and less sweet. It tastes best cooked. Plantains are a wonderful comfort food that can be used in dishes designed to heal the spirit and let go of worldy burdens. In Vodou, plantains are often considered an acceptable offering. Plantains are popular in Caribbean, South American and African cooking.

To fry plantain:

Choose a plantain with a few black spots on it. These taste best. Peel the plantain and cut into 3-inch sections. Slice these lengthwise into quarter inch slices. Sprinkle these with cajun seasoning to taste.
In a large skillet melt a tablespoon of coconut-oil (or butter or olive oil if you prefer). Drop the slices into the warm oil and let sizzle for a few minutes until golden brown, flip and brown the other side.
Place on a plate covered with a paper towel to drain and cool.
Enjoy as a side dish with rice and beans.
