Spaghetti Squash

Cucurbita pepo

Also called vegetable spaghetti (this is also the name of a cultivar). It does not taste like pasta, and you really can't just make it just like spaghetti, despite what people say, but it is tasty.

I like to poke a few holes in my squash with knife and put the whole thing in the oven on a cookie sheet at 350 for about 40 minutes, then I cut it in half, scoop out the seeds (these are edible and tasty roasted and salted). If it's not quite done, I put it back on the cookie sheet, cut side down. When it's done I scoop out the strands and proceed with my recipe.
