Tarragon
Artemesia dracunculus
Tarragon is a perennial herb used as a seasoning and pickling spice and occasionally used by witches to dispel negativity. It is associated with the element fire and dragons and was once used to treat snake and other venomous bites. True tarragon is often sold as French tarragon today.
Like many herbs, tarragon should be used fresh and added near the end of cooking for fullest flavor. Its oils are delecate and can be destroyed by drying and heating.
Tarragon is rich in Niacin, Phosphorus, Copper, Vitamin A, Vitamin C, Riboflavin, Vitamin B6, Folate, Calcium, Iron, Magnesium, Potassium and Manganese.
