Whipped Cream

Whipped cream is sensuous and feminine. I combines cream and sugar with the element of air and then tops something equally delightful.

Nothing compares to homemade whipped cream which can top cakes, pies, fresh fruit, pudding and tastes pretty darn good all by itself.

You will need:
1 cup heavy cream
2 tbsp sugar (or to taste)

Combine cream & sugar. Use a whisk in your hand or the whisk attachment on your electric mixer. Start slow and beat the cream until it starts to thicken. As the cream thickens, speed up your beating. When you can almost form a soft peak (that is, you lift up some cream with a spoon and it forms that classic curly pointed top whipped cream is famous for) slow down your whipping until it is just right. If you whip too much, you'll end up with butter!

Tips:

Everything should be cold, the cream, the bowl, the whisk. This will help things whip up faster.
Do not use ultra-pasturized cream. It's harder to whip.
If you like, you can make your whipped cream extra special by adding a few teaspoons of vanilla, cocoa powder or chocolate syrup, mint flavoring or cinnamon before whipping.
