Zucchini
Cucurbita pepo
Zucchini is a green summer squash, phallic in shape.
A zuchinni can grow to three feet in length, but is usually harvested at about 8 to 10 inches as it becomes tougher and more bitter the bigger it gets.
Zucchini can be enjoyed sliced, raw in salads, steamed and sprinkled with herbs, stir fried, cooked into a soup or sauce or baked into bread. It is delicious breaded and deep fried. Zucchini tastes best if it is cut and salted an hour before use then rinsed just before cooking.
