Apple Butter

Apple butter is spiced, cooked apples made smooth and delicious for spreading on toast.

Preparation Time:

Ingredients:

As many apples as will fit in your crockpot.
As much apple cider as it takes to just cover the bottom of your crock pot.
2-3 sticks of cinnamon
5-6 cloves
several grates of nutmeg

Directions:

Peel and core the apples and cut into quarters.
Drizzle some apple cider into your crockpot so that it covers the bottom, just so your apples don't stick to the pan.
Place the apples in the crockpot with the spices, cover the crockpot and put it on the lowest temperature.
Go to bed. (Probably make sure your fire alarm batteries are good, just in case.) (Or start it in the morning and smell that goodness all day long.)
When you wake up in the morning and smell that deliciousness, make some pancakes to put it on.
Remove the cloves and cinnamon sticks from the apple butter and stir it. You can put it through a food mill or blender to make it smoother, but a good stir will render it spreadable.
Allow to cool and put any you're not going to eat in the next few days in freezer containers.

Some folks like to add sugar. I personally wait to add any kind of sweetener until I'm ready to use it. Sometimes I like to use maple syrup or honey and sometimes I don't want to use any sweetener, depending on what I use it for.
