Basic Pie Crust

The start to any pie.

Preparation Time: 1 hour


2 cups flour
1 cup fat (This recipe was tested with coconut oil, lard and butter. See notes below.]]]
1 tsp salt
Optional sugar to taste
1/2 cup water


I am told that the secret to the perfect pie crust is that everything be kept quite cold, so chill all of your ingredients and tools in the fridge for a half hour. I have even gone so far as to put an ice pack on my rolling surface, but I am not sure it helped. Cut your fat into small cubes before you chill it. This will make your life easier later.

1. Combine flour, salt and sugar, if you're using it, in a bowl, mix well.
2. Add your fat and cut it in using a dough cutter or a fork. I am told this is very easy to do with the right food processor. My food processor is apparently not the right food processor. Cut the fat into the flour mixture until you can no longer see any chunks of fat. This can take awhile. When you no longer see chunks, get your hands in there and make sure you can't feel any. Squish any chunks into some flour and the side of the bowl.
3. Add water a tablespoon at a time, mixing well, until a dough forms. You won't need the whole half cup.
4. Turn your dough out onto a board and roll it. I like to roll it between two sheets of parchment paper or waxed paper, this makes things so much easier.
5. Place your dough in a pie pan. Use your hands to get it just the way you like it.
6. Chill the dough in the pan for a half hour, or a day or two. Or you can freeze the whole thing. (Don't use a glass pan as it could crack under this sort of abuse.)
7. Pre-bake the dough for 15 minutes at 475 degrees.
8. Add your fillings and enjoy.

Additional Comments:

This makes enough crust to cover the bottom of two standard-sized pie pans or you can have a top and a bottom crust.
