Grandma's Cucumber Salad
Basically, a refrigerator pickle, my grandmother brings this salad along to every occasion.
Preparation Time: Several hours, but only 20 minutes worth of work
Ingredients:
1 Cucumber, peeled and sliced
Salt
1/4 cup apple cider vinegar
1/4 cup light olive oil
2 tbsp sugar or sweetener
Directions:
Place some of the cucumber slices in a bowl, salt them well and then add more, salt, add more, etc. until you have all the cucumber slices in a bowl and they are well-salted. Set them aside to rest at room temperature for a 2-4 hours.
Whisk oil, vinegar and sugar together to make a salad dressing.
Drain but do not rinse the cucumbers. Add the onions, parsley and tomatoes. Toss the veggies together.
Pour the dressing over the vegetables and toss to make sure all are coated with the dressing. Let it sit several hours before serving.
This is best served at room temperature.
Additional Comments:
This is also tasty with the addition of roasted beet root,(this turns the whole salad pink) tomatoes, parsley, dill and/or green onions.
