Harvest Fruit Salad

This is a wonderful recipe for celebrating the harvest. Use fresh, locally grown fruits in season.

Preparation Time:

Ingredients:

2 green apples, scrubbed and chopped
2 red apples, scrubbed and chopped
2 Pears, scrubbed and chopped
1 cup green grapes, rinsed and whole or halved
1 cup red grapes, rinsed, whole or halved
1 cup plain yogurt
2 tbsp lime juice (or to taste)
2 tbsp honey (or to taste)
Candied walnuts or candied pecans (Or not candied if you prefer)


Directions:

Rinse and chop fruit and place in a bowl. Set aside.

In a separate bowl, combine yogurt, lime juice and honey and whip smooth. Taste it to make sure it's right and adjust as necessary. Pour over the fruit and mix well to coat.

Sprinkle candied nuts over the salad just before serving so they stay crunchy.


Additional Comments:

This is best eaten right away. If you store it too long, the dressing starts to separate and the nuts will lose their crunch. If you are taking it along somewhere, mix the dressing and store it separately, combine the fruits and give them a good splash of lemon or lime juice. Combine the dressing, fruit and nuts just before serving.

This is a great recipe for newlyeweds as it contains energy to enhance feelings of love and to promote prosperity and fertility. If you're more into the fertility than the prosperity, you can add a dash of vanilla to the dressing and bring in some color magic by omitting the green grapes and apples to use more red, if you're more into the prosperity than the fertility, use more green and add a dash of cinnamon to the dressing.

Quick Witch Tips

You could use lemon, lime or vanilla flavored yogurt as a quick dressing for this and omit the lime and honey. But it won't be as good.
