Dawn's Potato Salad
I like my potato salad colorful and nutrient dense. Feel free to add and omit as you see fit.
Preparation Time: About an hour
Ingredients:
4-5 Boiled Eggs, chopped
5 or 6 Large, boiled potatoes, cubed
1 Avocado, peeled, cubed (If you aren't going to eat it right away, wait until just before serving to add the avocado or it will turn brown and slimy on you.)
1 raw carrot, shredded
2 large cucumber pickles, chopped
1/2 red bell pepper, chopped
1/2 cup chopped fresh parsley
2 green onions, sliced
1 cup mayonnaise
1/2 tsp each ground mustard and turmeric
A few grates of nutmeg
A couple pinches of paprika
Salt and black pepper to taste
Directions:
1. Combine mayonnaise with paprika, turmeric, mustard, and nutmeg and mix well to make the dressing.
2. Combine all other ingredients and toss together.
3. Mix in mayonnaise into vegetables.
4. Serve chilled or immediately at room temperature.
Additional Comments:
I make a batch of this salad weekly and keep it in the fridge for a quick snack. It's a great breakfast.
