Pumpkin Butter

An easy way to use fresh pumpkin, it is good warm or cold and freezes well.

Preparation Time:

Ingredients:

As much pumpkin as you can fit in your crockpot, seeded, peeled, and chopped into 1-2 inch cubes.
sugar
pumpkin spice or seasonings of your choice.
Apple cider or juice.

Tools
A crockpot
Potato masher, blender, food mill, whatever works for you to get your pumpkin smooth


Directions:

1. Wash and cut up your pumpkin. You can use scraps from carving pumpkins.
2. Put your raw pumpkin in the crockpot. Put in enough apple cider just to cover the bottom of the crockpot.
3. Tun the crockpot on high for about 30 minutes, then turn it down to low and let it go.
4. Check every few hours to see if you pumpkin has turned soft and brown.
5. Mash your soft, brown pumpkin with a potato masher or use an immersible blender or run it through your food mill. Return to the crock pot.
6. Add sugar and seasonings to taste.
7. Allow the pumpkin to continue to simmer another 30 minutes.
8. Remove from heat and allow to cool and store in the fridge for several days or the freezer for several months. Or enjoy warm.
