Sloppy Omlette Couscous

My father used to make this for breakfast on Saturday mornings. It hints just slightly of his West African heritage.

Preparation Time:

Ingredients:

4 eggs
1 onion, chopped
1 green or red bell pepper chopped
1 tomato chopped
¼ cup milk (optional)
½ cup couscous, prepared as per package directions (or quinoa for those on low carb diets)


Directions:

Combine milk and eggs and whip till frothy. Whip the eggs alone if you don’t want to use milk. Saute onions and green peppers in butter for five minutes. Add tomatos, then pour eggs over the lot. Scramble eggs until firm. Serve over couscous or quinoa with a bottle of hot sauce.

This serves 2 hearty portions
